DEAN & DELUCA KAKA’AKO

ホノルルの注目エリアであるカカアコに出店が決まったのが2020年。そこからコロナ禍や様々な問題を乗り越え4年をかけてオープンを迎えました。もともとは1977年、N.Y.のSoHoから始まったブランドですが、このハワイに関しては現地オーナーの新たな試みを表現すべく設計からデザインまで進めました。日本でイメージする “ DEAN & DELUCA” の店舗とは異なり、ピンチョスやタパスなどのDelicatessen、焼きたてのパンやスイーツなど、周辺住民の生活に寄り添う店づくりを目指しました。ファサードはハワイで採掘された溶岩石を使用し引き締まった印象を与えます。老舗感を演出すべくサッシュは使い込まれた真鍮、店内で使用したウッドは一度ダメージを与えてからワックスを塗り込んでいます。ハワイアンキルトの“パイナップル”と”ウルの実”をモチーフにしたタイルが、親しみやすい雰囲気にしてくれています。床は、あえて二種類の色の違うモルタルで作ったタイルを採用し、月日とともにムラ感のある表情に成長します。カウンター天板や腰、その他の細かなディテールも徹底的にこだわり、その積み重ねによって ”良い雰囲気の空間”になったと思います。これから先、現地の方々に愛されるお店になる事を祈っています。

The decision to open DEAN & DELUCA in Honolulu’s popular area, Kaka’ako, was made in 2020. From there, it finally made its grand opening after overcoming Covid-19 and other problems.

DEAN & DELUCA is a brand originally started in Soho, New York City in 1977.

For the Kaka’ako store, we made sure that we proceeded with design to express the local owner’s new endeavor.

The store has a different impression from how DEAN & DELUCA stores are perceived in Japan. With delicatessen such as pintxos and tapas, and freshly baked bread and sweets, we aimed to design the store to be close to daily lives of residents in the area.

Lava stone mined in Hawaii was chosen as a façade material to give the storefront a stylish appearance. To give the store a long-established feel, the aged brass was used for the window sashes, and the wood used for the interior was intentionally given damages before wax was applied.

The design of the tiled walls was inspired by a pineapple and breadfruit motif of the Hawaiian quilt, giving the store a casual feel in a good way.

For the floors, we used mortar of 2 types of colors on purpose, so that the look of the floor would grow beautifully as the time passes.

We were meticulous about countertop and surfaces, and other small details. And we believe that accumulation of these resulted in making it “a great store”.

We hope that the store will be loved by the locals in the future.
